The format I like to follow is to start with the why, I explain why we are learning a topic, why it's useful, where it's used, so my students understand the significance of the information. Next I give a high level overview, a summary of a topic and then ask them to explain it back to me. Next I'll present them with a real-life problem/situation as motivation to delve deeper into a topic and I'll continue to do this - always relating the theory to real-life.
Finally after exploring a topic, I'll give them exercises to complete with my assistance, so that they have the opportunity to apply and reinforce the new information.
