I have a lot of experience in these STEM subjects as I have studied them all my life and I know the stuggles of them and what you have to do get around them. My main method of teaching would be to get an idea of what the student wants to get out from the tutoring and being able to identIFy the regions in which they are stuggling in a topic. To identify the areas of weakness it could just be directly said to me or I can give them some questions to answer based off their subject and identify the weaknesses for them and revise them with the student.
