I have a lot of experience teaching students of all ages/nationalities/levels. In the various schools I have taught in, I have learn different methodologies to fit the needs of different students. My favourite is described bellow.
My style of teaching is: test, teach, test. Together we can figure out the necessary content. Once we have this, I will first find out exactly how much of the target language you are familiar with. This will allow me to know what you need help with, and you don't have to waste time with me teaching the parts you already know. Then I will teach what is necessary. By the end of this and for the rest of the class, we will use this new target language in a constructive, useful, and natural conversation. At this point, you will have proven what you already know, learnt more, and then used it all together. The reason why this method works so well is that you will not just be filling in blanks. The conversation part of the lesson is what will really make you remember what you have learnt. Therefore you can apply this knowledge in the future with ease.
As far as how to know what content to use, I like to figure that out based on your personal preferences. Some students like very visual content with lots of pictures, some students like video games, some students like sport and activities. I believe there is always a way to implement your interests into a class.
