I often like to use English as a tool to look at other ideas such as conversation topics, mini projects and talking about the things you deal with every day. I have a lot of experience with the communicative method and using materials that enhance that methodology. Sometimes we'll use a PDF or book, others we'll look at questions on a topic and talk about short videos or texts.
I have also used table-top RPGs similar to Dungeons and Dragons in a class environment to give a more natural and fun way of practicing vocabulary and speech. Although that can seem difficult it provides for better roleplay as the normal situations students can be looking for things to fulfil a need.
