I would determine the level of food knowledge & food prep. first. ( knife skills etc.) What equipment is available to us. Determine basic hygiene knowledge. If we have to start from base 1 then not a problem. A written format of what we are aiming to achieve & in what time period. An ongoing history of food & good ingredients.
